If the purpose is to track the task/work performed by the employees then you can make use of the report - Team Member Work Analysis which assimilates information of every employee's work associated with Projects and Services.
Here, when you use the Activity Report option from the UI, you also have the Notes field but in reports, say for example the Team Member Work Analysis report, you will not be able to find the field because enabling Notes field would not make sense due to the limitation in the number of characters in reports.
Any field value that has more than 60 characters will be cut off in Reports and unfortunately we do not have a workaround for this.
